The Architecture of the Cellar
Designing, building, and maintaining the ideal wine storage space — from a temperature-controlled cabinet to a proper underground cellar
A wine cellar is, at its most essential, a promise kept to the future. When you place a bottle of 2019 Barolo or 2015 Pauillac in proper storage, you are making a commitment: this wine will be better in ten years, or twenty, than it is today, and you intend to honor that potential by providing the conditions that allow it to develop undisturbed.
Temperature is the dominant factor. The ideal storage temperature for long-term wine aging is between 12°C and 14°C, maintained as consistently as possible. Fluctuating temperatures — daily or seasonal variation of more than a few degrees — are more damaging than a slightly elevated constant, because the expanding and contracting wine pushes against the cork and accelerates oxidation. The traditional underground cellar achieves natural temperature stability through the insulating mass of the earth; modern temperature-controlled units replicate this through refrigeration.
Humidity is the second critical variable. The ideal range — 60% to 75% relative humidity — keeps corks from drying and shrinking, which would allow air ingress and accelerate spoilage. Very high humidity encourages mold on labels without damaging the wine; very low humidity risks cork desiccation.
Darkness and absence of vibration complete the quartet of conditions. Light — particularly UV light — degrades wine over time through photochemical reactions that accelerate oxidation. Vibration disturbs the sediment and the slow chemical transformations of aging. A proper cellar is dark and still.
