Temperature, glassware, decanting, and the art of presenting wine at its absolute finest

Wine served incorrectly is wine diminished. The most extraordinary bottle will fail to deliver its full promise if poured at the wrong temperature, from an inappropriate glass, or without the consideration its age demands. Mastering service is not pedantry; it is respect for the wine and for the people who will drink it.

Temperature is the most commonly misunderstood element. The old rule of "red at room temperature" was coined in the era of unheated stone manors; room temperature today often runs well above the ideal. Light reds — Beaujolais, Pinot Noir, Schiava — are best served cool, around 14–16°C. Full-bodied reds — Cabernet, Syrah, Amarone — benefit from 17–19°C. White wines span a similar range: complex, barrel-fermented whites show best at 12–14°C, while aromatic, delicate whites and rosés are served cooler, at 8–10°C. Sparkling wines should be thoroughly chilled to 6–8°C.

Glassware shapes the aromatic experience profoundly. The ISO tulip, designed to concentrate and funnel aromas, is the universal reference. For fine Burgundy, a wide-bowled glass allows the wine room to breathe and develop. For Riesling or other aromatic whites, a narrower bowl preserves freshness.

Decanting serves two purposes: separation of sediment (necessary for aged red wine and vintage Port) and aeration (beneficial for young, tannic wines that need coaxing open). Young Barolo and Rioja can transform over two or three hours in a decanter; aged Burgundy often needs only moments of air before it closes back down.
